If it's a body thing, maybe the constant "revivals" put a strain on the body.

Why couldn't Jason build these bodies tougher? Or did he make them weak on purpose?

I don't see why he made them weak on purpose. It'd be better if we have stronger bodies, so he won't have to deal with faulty bits.

Alternatively...maybe this is the best he can do?

It seems like they can use a lot of technology to make illusions, but not enough to make bodies. I guess everything really is limited...
